Merry Sisters of Fate Entry

My entry to the Merry Sisters of Fate Contest!

If I were a princess with a pea in my bed
I'd use the mattresses to go staircase diving instead!
Since I cannot sleep
It would just make me say beep
So I might as well have fun in this makeshift sled
But at some point all princesses must rest
So I think I'd just sleep on the floor instead
While being high up is fun
I'm afraid I'd just come undone
If someone put a pea in there once again.

Semi-Homemade Pizza

Ingredients:

1 whole wheat boboli pizza crust

pre-made pesto sauce

mozzarella

chicken breast tendorloin

turkey sausage

spinach

olive oil

Pre-heat oven to 450 degrees.

First dice chicken tendorloins into smaller cubes. With a splash of olive oil on pan, put chicken inside to sautee as soon as oil is heated. Take out chicken. Slice turkey sausage into smaller pieces and then sautee also on pan quickly. Then put spinach in pan and sautee quickly as well.

On pizza crust spread pesto sauce. Then add mozzarella (you can dice it, shred it, or in big chunks, all up to you!). Lastly add chicken, turkey sausage, and spinach onto pizza crust. You can also then add more cheese if you like!

Put in oven for 8 to 10 minutes. Then slice, serve, and eat!

This was really easy to make and have been meaning to try this out for a long time.

Sesame Soba Noodles

I love to eat food that is super simple and super quick to make. One of my go to quick fixes is sesame soba noodles, that I also like to dress with oyster sauce (if I have some in the pantry still)

Ingredients:

- 1 bundle of soba (buckwheat) noodles
- sesame oil
- chinese oyster sauce
- nori flakes (bonus!)


Boil water in a pot. Once its boiling dump soba noodles inside. I like to put a little bit of sesame oil in the boiling water as well so that the noodles don't stick to each other. soba noodles cook really quickly so in about 2 minutes or so they should be done already .

Strain noodles and put in a bowl, pour more sesame oil in it to your taste. You can stop here, but I also like to add a little bit of oyster sauce on top and then mix all together.

Finally, I like to add japanese nori seasoning ontop for more flavoring.

You can add meat to this as well like chicken pieces or beef.

The ingredients to this are mostly found in Asian or Japanese supermarkets, but make such a quick and great meal that makes it well worth the trip.

Semi-Homemade Banana Bread

Ingredients:

1 box of banana bread mix
2 eggs
1/4 cup of vegetable oil
1 cup milk
3 very ripe bananas


I had 4 very ripe bananas left in my apartment after a recent Costco trip (on a side note, why do my costco bananas always ripe up so quickly???). It was easy to go online and search for a semi-homemade banana bread recipe!!!! It turned out pretty well too and tasted quite good!

Pre-heat your oven to 375 degrees.

First mash the three bananas in a large bowl. I just used a fork and mashed it till it was mushy. I couldn't get all the lumps out.

Next put in the banana bread mix, the 2 eggs, 1/4 cup veggie oil, and milk into the large bowl with the smashed bananas. Mix together until all ingredients have been incorporated well.

I used two disposable bread loaf container to fill in all my batter (which was about half way through) and then put them inside the oven.

It took a long time to bake!!! The box said 50-60 mins, but it wasn't ready yet when i checked so I must have left it in there for around an hour and a half!

It turned out moist and delicious though. If you want a less cakey texture, use one cup of water instead of milk!

Fall Spaghetti

Ingredients:

- 1 box of whole grain pasta
- 1 bottle of vodka pasta sauce
- 1/2 lbs of ground turkey
- 2 smallish yellow squash
- bundle of white asparagus


Prep your veggies! Dice the squash and chop the asparagus!

Begin to boil water for pasta

Heat pan with oil (olive oil) and then sautee ground turkey. Add in veggies.

Put some EVOO in the boiling pot of water and some salt, add pasta once the water is boiling (BOIL FOR SEVEN MINUTES)

In different pot put sauteed veggies and turkey then add vodka sauce.

Once pasta is done, toss it in a little more EVOO, plate it and then put some sauce on top! You can also add some grated parmesan cheese.

Mushroom and Broccoli Frittata

Last Thursday I got off my lazy butt and actually cooked something from scratch! Voila what came out of it is an extremely simple frittata that is both delicious and easy to make.

Ingredients:

3/4 cup bella mushrooms
1/2 cup chopped broccoli
1 cup ricotta cheese
4 eggs

Pre-heat oven to 375 degrees.

I used steamables broccoli and put that in the microwave first. Then I diced the mushrooms cuz I like them in small pieces. I mixed the eggs and the ricotta cheese first, then added in the mushrooms. After the broccoli finished in the microwave I chopped it up really quick and added that to the batter as well.

Afterwards use a 9 inch pie tin and spray the surface with cooking spray or brush some cooking oil on it (which I did). Pour the mixture into the pie tin and then put inside the oven.

Let it stay in there for about 20-30 mins (I actually left mine for about 35 mins).

Afterwards let it cool for another 15-20 mins before serving.

This was such an easy meal to make it amazed even me! The combinations you can use is also endless. In the future I'm going to add more ricotta cheese and also try some cheddar or provolone in the mix! I'm also going to try using spinach and adding some kind of protein.
